Yeah, I'd probably agree that Guthrie is this era's all round guitar extraordinaire
From the 80's there was so much to choose from.. I'd agree with the Vai track for sure. Also, Eruption for much of the 80's, anything Vai did with Roth, anything by Yngwie..

I think for the 80's we would probably have to add Satch Boogie.And from the 90's maybe something from Greg Howes' Introspection album , maybe Jump Start or Button up?Which reminds me that I need to go back and finish TRYING to learn Jump Start
