Trying to pick apart the first turnaround. It seems to be a I-IV-V turnaround going from E-A-Amin-B7. Can you maybe pm how this works theory wise?

The turnaround works for I-IV-V it has a C natural because it happens when A7 comes in and you can use A minor pentatonic

Welcome to my "Blues Turnarounds" lesson!
In this lesson you will learn how to play different turnarounds in the style of blues. All of turnarounds are based on E minor pentatonic and you will have a lot of fun learning them. Those licks can be used in any type of blues progression and not necessarily as turnarounds. When you are practicing use a metronome at a comfortable tempo.
I used a standard E tuning :
