I thought Cadences were about adding punctuation to your sentences. So like the commas and full stops in sentences translated to music. Or am I off my trolley?

Yes that makes sense.
When you listen to Michael Brecker and John Coltrane they are describing cadences very well at any given point- even over one chord only.

Pretty much
Ionian - I IV V I or I V I or I VImin IV V or IImin V I etc

You already know Dorian - Imin IVmaj etc

The trick is coming up with all of them and understanding how to use them in songs and compositions.
