Generally the only ones I watch are ones that involve little to no cheesy japanese humor, no school girls, tentacle monsters, or any other cliche that fills Japan. Ghost In The Shell, Akira, Vexille, Sky Crawlers, Appleseed, Vampire Hunter D, etc

i know what you mean! my gav are around that style to like Code Geass, Wolf's Rain' Elfen Lied etc i enjoy more,psychological. dramas,with action and a bit of humor of course.

I got into watching anime by watching "Claymore" - brilliant, serious fantasy stuff for adults - and by that I don´t mean any kinky erotic stuff but the amount of violence/blood used. This anime - as it is so often the case - is based on an ongoing manga which is of course better than the anime - but it´s still pretty good.
I can also recommend "Berserk" - same applies: based on an on-going manga. The anime is only a very very small glimpse into the full story but heavy, very dark stuff.
I´m surprised that no one has mentioned "HELLSING" up until now - brilliant show and look out for the OVA version which is even more based on the manga (which is completed - unfortunately)
A few recommendations of shows I really enjoyed: Requiem from the Darkness Samurai Champloo Basilisk Samurai 7

Ghost In The Shell, the original and sequel, are sheer BRILLIANCE.

Ghost in the Shell is amazing anime with even some 3d animation and great futuristic concept/vision. There is a movie as well. Of course it's a matter of personal preference, some of my friends found the storyline a bit "boring" at times. Definitely check it out and see if you like it.

You may have noticed that GHOST IN THE SHELL keeps coming up. With good reason. It is quite honestly one of the best Anime movies ever made. The sequal is pretty good but it pales to the original. There is also the GHOST IN THE SHELL TV SERIES called STAND ALONE COMPLEX which is quite good. Also, try BLOOD THE LAST VAMPIRE and if you are feeling like something a bit wacky/trippy try PAPRIKA.

In my case it left an especially deep mark since I watched it for the first time when I was something like 13 or 14 years old. My fragile mind could never become the same again.
Honestly, NGE is the kind of stuff most people who are into anime would want to see, but also stuff most parents wouldn't like their kids to see, at least as too young (like before their later teens). It has some serious psychological levels.

I watched alot of Naruto, and a bit of One Piece. One Piece is an easy, funny anime. I would like to watch others (like Ghost In The Shell) But the problem is: They're soooo time absorbing! If I would count the Naruto hours and played guitar instead I would be Hendrix (a bit exagerrated)

YES! One of the best Anime ever made. Period. The sequal is worth a watch too as is the tv series SECOND GIG and STAND ALONE COMPLEX. Ghost in the Shell RAWWWWKKKSS;
