I just go part by part slowly and get the piece done however long it takes. For some long and difficult ones it can take even 2-3 weeks but once you learn it you won't really forget over night It will take you long before you forget, at least for me. I don't really know tricks for that, it just worked for me.

Breaking down the piece and taking it step by step is the best way to go. What is important IMO is to learn all the parts well before going to the next one. After every learned bit, you learn to connect them as well, and play them connected couple of times. If you repeat learned bits after every section, they will stick in the memory for long time (you need to play it from time to time ofc).
