As was mentioned, the nicer version of the Les Paul will sound a bit better due partially to having a bit better pickups, wood, etc. But will you notice a HUGE difference? Probably not. Honestly, the Epiphone LP is solid instrument. I'd suggest maybe putting the money it would cost for an upgraded less paul for Pro studio monitors/earphones, and at least one good mic like an SM 57.
KRK makes good entry level monitors as does ALESIS. About 200 each or so. But they don't have tons of bass so getting a matching sub won't hurt
The bose system that you can get when you buy a mac is a great playback system for music/movies, but it's not the best for mixing since it has lots of BOOM and TWEET. Monitors/Speakers used for recording mixing, are designed to sound sorta flat without much boom/tweet. But heck, some folks work with ear buds til they save up for monitors so just use whatever you can put together and always be in saving/upgrade mode
