I would stay with coils if you want a coil sound...
http://www.bareknucklepickups.co.uk/ My advice: Spend some more money and get handmade coils like a set of bareknuckle pickups. Their pickups are made by hand and sound far superior to machinemade ones like Dimarzios etc... bareknuckle coils are wax potted by hand which makes them totally noiseless and they are versitaile like hell. Check their site, ask in their forum or write a mail to the owner Tim and tell him which sound you want, he is always helpful! +1 on the bareknuckles, amazing versatility and tone, I'm gonna get them for all of my guitars at some point.

Irish Tour Set sounds like the way to go IMO as well. If you can't find that particular set, regular Fender Texas Specials or even Vintage Set will make your strat nice and twangy.
