I would say Cubase is the best before you start going for professional stuff like ProTools which needs special hardware. Cubase is capable of extremely professional results, and is in no sense a compromise, but it starts at $400 and you will probably end up spending more on effects and instruments etc. There are several other good DAWs on the market, but I haven't used any of them and don't know prices. You can still get hold of Cubase SE3 which is a very capable cutdown version of Cubase and might be just what you are looking for - it has most of the important features. The main limitation is that it is limited to 48 audio tracks, which probably won't be a limiting factor for a while It costs $150.

No problem $799 gets you the top of the line Cubase version 4, there is also version 4 Studio which is about $400, SE3 is based on version 3 and is the "Lite" version. I am still using Cubase 3 and nowhere near its limits, so don't be put off because it isn't the latest version. At that price it is a great buy.
