Try "Hotel California" by Eagles, it's a nice standard for multiple acoustic guitars.

You can listen to the Scorpions - Acoustica album - http://en.wikipedia.org/wiki/Acoustica_(Scorpions_album)

Try out some Alice in chains and Nirvana's unplugged! Like "Over now" and "The man who sold the world".
Also, consider making acoustic versions of famous songs even if you never heard acoustic versions before If you search for a guy named "Emmerson Nogueira", he basically became very famous in Brazil by making very nice acoustic covers of famous international songs. I second Sensible Jones with Neil Young. He has some great stuff that you can easily fit to your band set up. Also check out Crosby, Stills, and Nash (or even when Neil Young was with them) They do amazing harmonies.
