I figure I'll throw my 2 cents in
Extreme Power Metal - Children of Bodom - Hate Breeder or Hate Crew Death Roll.
Makes use of neoclassical melodies with screams, but not really the cookie monster voice like death metal. This was the band that got me to appreciate screaming because they're kind of on the cusp of shouting and full on screams. Brilliant guitar work.
Iron Maiden - I highly recommend picking up "Number of the Beast". The whole album is brilliant. Hallowed be Thy Name is one of the greatest songs I can think of. Powerslave is a good album too. To really "get" newer metal, you kind of have to have a background w/ Priest/Maiden. Not saying you can't enjoy it otherwise, but those are always listed as an influence.
Rust in Peace is a great album as well. Megadeth are under appreciated outside of the metal/guitar player community.
