I use something like Reaper or Krystal for multi-tracking. Then you can export the tracks you want for your mix-down easily, as well as adjusting individual levels and adding in effect chains.

Though I would highly recommend Reaper ( http://reaper.fm/ ) - it's very easy to use, full-featured, pretty quick to learn if you understand even the basics of multi-tracking and there are tutorials available ( for instance : http://www.cockos.com/wiki/index.php/ReaperQuickstart ). And you can use the trial version indefinately.

I agree - Nick as you now have a little recording experience it would be good to seitch to Reaper as I originally suggested - you get a lot more flexibility.
