Hi

i'm writing a track

so i work on, play the chords over and over, but more i play more i go away from where i had to start....

now the track is almost the same as start, but how to do not go to much away ?

when do i consider the chords grid finished ?

Look at songs with a similar feel to your idea and look at how the song is split up into sections, you might find something like...

AABABCB

Where section A is

Em.../G.../D.../C...

Section B is

G.../D.../Em.../C

and Section C is

C.../D.../Em.../Am

That should give you an idea of how to structure your song and create a melodic story.
