Hi I had my first day of AIM (australian institute of music) yesterday ad they gave me some sheet music. Above a bar it has C*7, where the * is a little triangle. What does the little triangle mean?

triangle is maj 7, in your case C maj 7
circle is diminished
line through the circle is half diminished or min7b5

yes
but make sure you add maj7th not (dominant) b7th
C maj 7 = C, E, G, B

Emir is right. You find the "delta" system to write maj7 chords especially in jazz staffs.
