Well you can use existing songs and make them for 3 guitars Like you said , one can play chords, other can play fingerpicking same chords on other position...and third can play some licks You can do that with a lot of songs, and can sound very interesting..

either freebird or sweet home alabama uses 3 guitars. Can't remember which one right now

Iron Maiden, they use 3 guitars perfectly a lot on there albums "Brave New World", "Dance Of Death", and "A Matter Of Life And Death".

Just make sure you play in unison and not confront notes from chords while you play. Rhythm guitars should play different arrangements on the neck but notes that will sound good together. On guitar should be for lead - licks, fills and solos.
