There's a lot of good shredders out there. Unfortunately only 10% make music I can listen to. Satriani has got to be up there though. Near flawless technique but also amazing song writing ability. I agree with Emir here, playing guitar fast is a challenge and all of us at one point or another pursue it, however sometimes we take away musicality for the sake of playing fast, when I listen to SRV I understand that playing bluesy slower licks is more difficult and challenging. I only discovered him lately but he is a fantastic player. Also I would mention Marco Sfogli (first appeared in Dream Theater vocalist James LaBrie's solo project) or even Guthrie Govan who is not even considered a shredder but incorporates fast picking/sweeping/legato passages into his playing while still keeping balance.
