Robben Ford has made a lot of videos as far as I know, but mostly bout blues I think....
I didn't get really what You are after here, since "normal" jazz theory applies to "fusion" or the way these players play too.... It's really to use a more "rock"-approach into it, with bends, legato stuff and vibrato. Jesse, check out Don Mock, he made some great fusion videos, very nice ideas there.

Frank Gambale has one instructional video about it I think, Scott Henderson also, Alan Holdsworth has best instructioal video on that subject(arpeggios, scales). Haven't seen Alan's yet, I don't dare to.... But as his knowledge is really outstanding, I think these must be killer one's. Scott's is also very good.
