It shows he has a lot of "headroom" in his playing, I think. In the way that he's able to still play very good but add in these small things. I know drummers can talk about this too, but I think we can use that in guitar playing as well - or any other activity. If a melody requires 100% of your focus, then maybe you're not able to throw a "joke" in there, but if it only takes 50% of your playing and focus capacity you have some "headroom" to joke, recover from mistakes etc.
