I see people on the board mention them all the time, but what exactly are they? How do they compare to other pickups? Why are they better?

Regular (single coil pickups) have one coil, humbuckers have 2, wired to cancel out hum. A humbucker is usually twice the size of a single coil and looks like 2 pickups side by side. Although they were originally created to cancel hum (hence hum-bucker), these days they are used for their tone. A single coil pickup sounds bringht and cutting like a Stratocaster, a humbucker has more grunt and drive, and generally a higher output, like an SG or Les Paul. Its all about the tone really now - you can even get after market pickups that claim a single coil sound but cancel hum as well.
