Sibelius is very cool indeed, great software. Cubase also has a good score option. Lot of composers use it today for composing (the cost of making a classical composition for the orchestra is too much, so why not doing it in MIDI)

The Axe-Fx is mainly a guitar amp simulator, not recording software or VST.
