Would love to know what he's actually doing; I think he's moving a two string triad shape with his left hand through octaves for the first part?

He is indeed very good. Those arpeggios sound ace.

It's something close to what you said, by the looks of it. The 2nd arpeggio has got a dominant 7th thing going on as well.
