hi Iain, you could start composing one beautiful melody, a melody that shows what u feel and think about the person, in this case your girlfriend , when you got it, call this melody "main melody"

You can start with either a melody or harmony. I think better option is to start with some simple chording, and insert main melody. The songs concept should be similar to a vocal song. You will need some main melody, verse melody, solo part etc.

Yeah you can start either way..I would start it like a normal song, chords first for intro, verse, chorus..And than compose the main melody (solo) over different parts
