The way I learnt and still learn theory is to learn the terminology and theory of the stuff I can play and know the sound of, and then learn a little bit more to keep me motivated to either progress with my playing or understanding.

Trying to learn a whole lot of theory at once easily creates confusion or gives you a load of brain stuff that you can't apply practically.

Yup! Agreed, and I think that's why it can be important to have a good foundation - from the very first steps. I.e. learning how a major triad is built, how a minor triad is built and then maybe a bit about intervals. It's fine knowing there's something called a G#7#9b13, but if your brain hasn't processed and stored what a triad consists off, then you'll struggle with understand what that chord is of course.

I still think it's good to be curious and seek out new knowledge, but having a good foundational knowledge is paramount.
