Another is Clapton's Unplugged album.
One of the nice things about it is that he rethinks the songs and makes them work specifically for acoustic, so you get very different versions of Layla and so on. I haven't heard a lot too, and my vote goes for the Clapton one. It's one of the most famous ones and sounds awesome.

Thanks guys! I heard Claptons and his acoustic version are amazing!
I'll check Die toten hosen's and Shinedown's acoustics! Thanks for the suggestions.
