That's true,many of my lessons are bit advanced but still there are some beginner and intermediate lessons,
each of us needs to find what fits best to him,style,level of complexness etc. There's only one way to get speed,practicing.  Of course there are many ways and exercises but whatever you practicing, you're building yourself up,seems like there isn't wrong way, it's only matter of time you're willing to give,that'd be final conclusion. Just practicing. Scale..scales(diatonic ones) are just groups of 7 notes to me, you do with them whatever you want,you build chord,chord progression,solo etc. Which scale to play over certain chord? That'd be kind a wrong question,don't get me wrong. There's a key(tonality),chord progression and scale as a mother of all. Simplest example is: you have 7 chords inside of scale and you can play the same scale over each of these chords. But that's not simple as that,I'd need a much more time to explain it all, that was simplest way. As for the writing,good thing is to have kind a huge library of licks and chops, you combine that with what you're feeling atm and there you go,a part has been written. im actually in the same position as you kyle, i don't really feel like im advancing anymore. so what ive been doing is catching up on my music theory, which has actually really been the thing i've been advancing more in which in turn helps out my playing ability and my song writing, so you should try that out
oh and im trying out new guitar tunings and things. and just looking at a bunch of random songs i like and getting the GP of them and just picking apart the licks and like muris said, im just trying to build up my armory of metal licks haha.
