Theres a great video on youtube where he explains the whole dynamic to his picking. The greatest way to achieve it is to look at how your thumb is positioned, the more you bend your thumb, the more angled the pick will get (getting closer to PG's tone) while the more your straighten it out, the easier it will be to play fast, but the same dynamics wont be given....

He's changing the angle to get more
different sounds from his picking,wise approach tho.

You should be able to change the angle to produce different sounds, I like Eric JOhnsons picking technique explanations, they are a bit better then Pauls.

Exploring is what you should do, to get more experience with those angles and to see if you really need them at all, that's personal preference.
