Id like to expand the final fantasy vote into Nobuo Uematsu
That man is just killer
Espescially his work with the black mages where he made metal compositions of his previous game songs
my favorite sountrack would have to be Final Fantasy IX though (yeah Vii's was good, it just didnt move me with the story as much as IX's did)

I mentioned this is a similar thread but this thread is not complete without the fantastic work of Saori Kobayashi and Mariko Nanba for Panzer Dragoon Saga (or Azel: Panzer Dragoon RPG as it is known in Japan).

This is an example of a great game being pushed to even further greatness by a completely immersive soundtrack. The music they created perfectly captures the world that the developers made and really hits all the right marks. In fact it's the only video game soundtrack i'll have on regular rotation in my CD player.

A must listen for anybody IMO!

All time my favorite video game score, Quake II, By Sonic Mayhem

Quad Machine
The Big Gun
Rage
Descend into Cerberon
March of the Strogg -and so on.. All rad heavy metal..

Agree on halo score, that rocks..
I think NFS Most Wanted have some great tracks too worth to mention.. including some by bullet for my valentine and Disturbed
