Also what does all this mean. Recording a dry take? With no effects? How do you get it to sound how we want without effects and without being us? Also how do you record in mono and do you record left speaker or right speaker or does it not matter? I'm completely lost as normally I just dial in my tone and record a take with and without backing.

He want everything dry and will add effects by himself to make it fit in the mix in a better way. I understand that you want your sound with effects to come through. What you can do is record it dry in the track without a backing, and then on the backing you add your effects so he hear what you want it to sound like tonewise...
Even if you record mono you will have sound in both left and right channel. I don't know what software you're using, but in Cubase, even if I record mono I will have sound in both without adjusting settings. Stereo recording is only necessary if you for example want delay bouncing differently in left and right channel (ping-pong delay maybe?). And maybe if you use Pod X3 with 2 tones together left/right, I think?
Guitar is a mono instrument anyway so recorded dry it doesn't matter. You will have smaller files this way...

I know what you mean, haha... It is really dificult to get the same feel when playing dry. With delay and reverb I get loads more of sustain and hang in the tone, so recording dry will make me have to dig into the strings more and play cleaner...

ztevie has already explained this but I would just add that you can put your effects on the insert channel in your DAW. That way you can hear while recording but the effect will not be recorded unless you tick that option in the export dialog box (window).

Believe me that the sound engineer makes these effects during mixing. His guitar signal is as dry as possible during recording but he can hear the effects while playing. When they play live that's something different.

edit: When I say dry signal, I don't mean you should switch the distortion off. Only delays and reverbs if you have any
