Yes, all these tracks are recorded separately, as tight as possible. You can use different guitars, different amps, different cabs, so you get more diverse sound. Just depends what you need to record.

Double tracking is two guitars panned 100% L/R and quad would be something like two 100% L/R and two 60-80% L/R but there volumes something like 3-5db lower than the two first ones. ... Yes - depends on how your daw's panning law is set. In some daws you can choose the curve that you want to use.
