I can't figure out what these bands use, I always have the feeling it's harmonic minor, but I can't tell for sure, can somebody give me a hand on these bands' theory?

Yup, major scales are not that popular in metal

Mostly harmonic minor. It is little bit confusing the way he uses it, considering harmony.
