This comes from a drummers perspective, who now plays guitar(and poorly at that):
Instead of "1 e & a 2 e & a 3 e & a 4 e & a" which is the count for 16ths - which equals 4 beats per note, a total of 16 per measure
For 1/8 notes you count "1 & 2 & 3 & 4 &" - 2 beats per note, a total of 8 per measure
The way I think of it is : Imagine your 16 notes that you know as Up and down strokes - Now just do down strokes only - These are 1/8 notes
