It is a common slang in English speaking countries to refer to a guitar as an axe. I myself do not do it, but I know of very many that do. I had the same question some time ago, and I came across this response, and I thought it was a great one. I am not certain if it is true, but if it is, it makes perfect sense.

"When you first started practicing you were supposed to go out to the "wood shed" so you wouldn't disturb others. Practicing is still referred to as "woodshedding". Its called an "axe" because you went out to the wood shed and used your "axe" to learn your "chops". The term "axe" can apply to any instrument - trumpet, saxophone, etc. Musicians will ask "what's your axe?" and that is what they mean."

"Axe" is also used in Ebonics. It means "to ask".
Example: "I axed home boy if he had fiddy cent I could hold."
Translation: " I asked my friend if he had fifty cents I could borrow."
