Well, the ultimate Paul Gilbert song in my opinion is Technical Difficulties, featuring an amazing solo over Pink Floyd's Comfortably Numb chords.

But for a start, Id say try learning some of of his song's on "space ship one" album, their more mainstreamish than his other songs and feature less complicated riff and solo work.
