I sometimes bar and sometimes use two fingers,

depends on double stop licks or riffs that are 2 frets apart I will barre the first finger and play the double stop 2 frets up with fingers 3 & 4... normally, but not always

This really depends on the piece you are playing. I usually bar those chords as its seems economic to me. And you should be able to add some vibrato when playing those double stops too.... Try different methods for playing those passages and see what is most comfortable to you. There is no right or wrong way with this...

Bar them with different fingers (This time I would go for fingers 1 and 3 of the left hand). Apart of economize your hand movement, you'll have 2 fingers ready to go for another passage
